Get ready to feast your way through delicious ocean-friendly culinary bites and Veuve Clicquot sparkling wine during this pre-fixe four-course menu with Veuve pairings.
Enjoy a delicious evening prepared by C Restaurant + Bar’s Chef Matt Bolton and new Sous Chef Michelle Lee as they introduce their first wine dinner weekend. Listen to live music from Mark Banks and John Sherry and learn about the craft of making bubbly from Veuve Clicquot’s sparkling wine expert Francios Hurtel.

Background on Chef Matt Bolton:
In 2000, Bolton began working with renowned Chef Cal Stamenov at Bernardus Lodge as sous chef for Marinus Restaurant. After almost six years of working under Chef Cal Stamenov, he would go on to take the reins at The Covey at Quail Lodge as Chef De Cuisine. From there, he commanded the legendary coastal views of Pacific’s Edge at The Hyatt Carmel Highlands as its Executive Chef. Bolton’s cuisine is a celebration of the Monterey Peninsula and highlights the treasure trove from local fisherman, foragers and farmers.
Sitting where land and sea meet in natural splendor, InterContinental, The Clement Monterey emanates a relaxed and discerning coastal lifestyle.
